  2. One of my great regrets is that I didn’t haul away THE WORK’S sign when they took it down and tossed it in a the dumpster in the 1980s. The sign was a Chicago gyros classic. The Greek cousins who own The Work’s remain the greatest unsung food heros on the Northside of Chicago.

    Truly a wonderful project. My hat’s off to you, sir.

  3. I really enjoyed your Gyros signs – and also what you wrote about the Gyros experience. Yes, it’s the little details like the grilled pitta that make a gyros/doner/shawarma experience memorable.

    I was interested in what you had to say about the yoghurt sauce – here in the UK it always seems to be chilli sauce or hummus, which personally I don’t think is as good. Clearly I must get to Chicago some time for a proper gyros experience!
